In a medium to large saucepan, combine the apple slices, sugar, cinnamon, and vanilla extract. Bring to a boil over medium heat. Stir frequently to dissolve the sugar and prevent the mixture from burning the bottom of the saucepan. After 30 minutes, the apples will be very soft.
Using an immersion blender, puree the apple mixture until smooth. If you do not have an immersion blender, you can also puree the mixture in a blender or food processor.
Let cool. Now it’s ready to use!
