I love making apple pies from scratch, but when I’m pressed for time, I often “cheat” and use this apple pie filling recipe with a store-bought crust. This apple pie filling is a classic, made with tart Granny Smith apples, brown sugar, butter, and cinnamon. It’s simple, delicious, and easy to make.

This apple pie filling can also be used in other baking projects, such as filling homemade pop-tarts, topping ice cream, or filling apple dumplings. Another fun idea is to make a large jar of this recipe and gift it to a friend who doesn’t like baking but would appreciate most of the work already done. LOL.

Apple Pie Filling – A Beautiful Mess

Peel and core the apples. Cut them into bite-sized pieces.

In a medium sauce pan, combine sugar, butter, vanilla extract, and cinnamon. Cook over medium heat until melted. Add apple slices to pan and cook until slightly softened, 5 minutes.

In a small bowl or cup, mix the cornstarch and water to make a slurry. Pour this into the pan and continue cooking for 1-2 minutes. The liquid will begin to thicken.

You can use this apple pie filling right away, or let it cool and store it in a large jar or other airtight container in the refrigerator for at least 2 weeks.

Tips and Substitutions

  • Granny Smith apples are my favorite variety of apples to make apple pie with, but any apple will do.
  • If you like, you can substitute a spice blend, such as pumpkin pie spice, for the cinnamon.
  • This recipe can also be applied to similar fruits, such as pears, for example, if you want to make a pear pie filling.
