Chickpea “Tuna” Salad Sandwich: Hearty, Quick, and Vegan

ingredient:

  • ½ cup chickpeas, rinsed and drained
  • ¼ cup vegan mayonnaise
  • ½ cup chopped celery
  • ¼ cup chopped red onion
  • 2 slices of Dave’s Killer Bread (Dr. Belardo uses the high-fiber Powerseed variety!)
  • Salt and pepper to taste

  1. Place the chickpeas in a mixing bowl and mash with a fork until crumbs form.
  2. Stir in vegan mayonnaise, celery, and red onion.
  3. Season with salt and pepper.
  4. Spread the chickpea “tuna” salad on one slice of Dave’s Killer Bread and top with a second slice.
