I found an apple cinnamon muffin recipe without this grain made of apple sauce with despair. (Is it true that the necessity is the mother of the invention?)

In this special morning, I realized that there were only five eggs in the refrigerator. Especially when each child can eat three easily! I have coconut powder, homemade apple sauce and coconut oil. So I mixed them.

The children asked them for a week every morning, and a delicious (and “tool”) breakfast recipe was born!

I will be real here… I was not always a good bread. It makes sense considering that we often don’t eat grains. Nevertheless, there are many scrambled eggs for breakfast, and we all only baked foods. Even now, my Hashimoto has disappeared and I ate grain (and even gluten), but I still enjoy coconut powdered products.

It is always a good feeling to fit the recipe that makes both moms and children happy. These are reminded of apple pies, but I think of them as muffin versions.

If you don’t eat coconut flour muffins, I know it’s a bit smaller and more dense than a normal muffin. Nevertheless, they have a lot of texture and fragrance with apple -flavored bread. It is filled with protein and fiber, no gluten and no grain. This muffin uses both coconut powder and coconut oil, so not to mention all the health benefits of coconut.

I conveniently chose this apple sauce and cinnamon combo, but this muffin is incredibly versatile. I have found that this recipe can be replaced with coconut flour cinnamon apple pancakes with some simple modifications!

Try this mix -in by using muffins or pancake recipes as a base.

  • Reduce the apple sauce to ¼ cups and add to the overburgic banana before blending.

  • Stir 1/2 cup toast minced nuts like walnuts

  • Mix fresh or frozen blueberries or raspberries with 1/2 cup.

  • Add ½ cup of chopped apples for additional textures.

  • Add 3 tablespoon cocoa powder to make muffins like a cupcake almost.

  • For extra crunch, put a crushed coconut before baking

  • Skip the apple and make them Orange cranberry or Lemon Blue Berry Muffin!

A rich breakfast muffins that can be personalized according to certain tastes.

  • Preheat the oven to 400 ° F.

  • Use Greece or Silicon Muffin Cup or Paper Liner with coconut oil for muffin pan.

  • In a large bowl, eggs, apple sauce, coconut flour, cinnamon, nutrient, ginger, baking soda, baking powder, salt, vanilla, melted coconut oil or melted butter, honey and milk are mixed. Sit the muffin dough for 5 minutes so that the coconut powder absorbs moisture.
