Pomegranate Vinaigrette Dressing Recipe

MONews
5 Min Read

Since we eat a lot of salads around here, I like to vary the dressings I use. I love ranch dressing, but it can get boring after a while. This homemade pomegranate vinaigrette is fruity and light, making it great on salads, veggies, and even as a marinade!

It probably goes without saying that the pomegranate salad dressing you get at the grocery store is not ideal. The addition of vegetable oils, added sugars, and flavorings does not guarantee a fresh vinaigrette taste. It only takes a few minutes to make yourself and is so full of flavor!

Homemade Pomegranate Vinaigrette

I love making a variety of homemade dressings because they are more nutritious (plus they taste better!). Pomegranate Vinaigrette is fruity, tangy, naturally dairy-free, and gluten-free. The star of the show is pomegranate juice, which is packed with antioxidants that support heart health. Extra virgin olive oil has a creamy mouthfeel and is rich in healthy, anti-inflammatory omega-3s. Like pomegranates, olive oil is good for heart health.

To offset the heaviness of olive oil, apple cider vinegar is added for its tangy flavor and gut health benefits. Dijon mustard adds a bit of tang and subtle sharpness. The honey (or maple syrup) ties everything together and naturally sweetens it.

I use fresh herbs from the garden here for an added antioxidant boost. In cold weather, you can easily grow it on a windowsill! If you have herbs on hand, you can substitute dried herbs for fresh ones.
